 Sizzleton vs. The Slab
A 3‑2‑1 Rib Ritual

Written by Mark  H Schwab

Featuring “Hotter Than My Ex” — the rub that burns bridges and builds flavor

Let’s cook.

FULL RECIPE + STORY

The sun rose over Sizzleton with a heat that felt personal — the kind of heat only one pig could match.

Sizzleton stepped out of his smokehouse lair, apron tied tight, branding iron glowing, and a full rack of St. Louis–cut ribs slung over his shoulder like a warrior carrying his weapon of choice.

Today wasn’t just a cook. Today was a reckoning.

Chapter 1: The Prep — “Let’s Make These Ribs Regret Their Life Choices”

Sizzleton laid the ribs on his butcher block, the wood still scarred from past battles. He ran a hoof along the back of the rack and grunted.

“Membrane’s still on. Amateur hour.”

With one clean pull — RRRIPPP — the silver skin came off like a bad breakup.

Next came the star of the show: Hotter Than My Ex, the fiery, citrus‑kissed, attitude‑dripping rub that Sizzleton claimed “tastes like revenge but smells like victory.”

 He hit the ribs with:

  • A light coat of yellow mustard as binder

  • A generous, even dusting of Hotter Than My Ex on both sides

  • A 10‑minute rest to let the rub sweat in and stain the meat a deep, dangerous red

“Good,” he said. “Now they’re ready to apologize.”

Chapter 2: The Smoke — “Low, Slow, and a Little Bit Petty”

Sizzleton fired up his smoker to 225°F, feeding it chunks of hickory and orange wood — his signature combo.

He placed the ribs bone‑side down, closed the lid, and whispered:

“Three hours. No peeking. Let the smoke do the talking.”

The 3‑2‑1 Method Begins

3 Hours — Smoke Phase

  • Temp: 225°F

  • Position: Bone‑side down

  • Goal: Build bark, deepen color, let the rub set

  • Sizzleton spritzed every 45 minutes with a mix of:

    • Apple juice

    • A splash of cider vinegar

    • A wink of Florida orange juice (his secret)

    •

By hour three, the ribs had darkened into a mahogany masterpiece.

Chapter 3: The Wrap — “The Foil of Destiny”

Sizzleton tore off a sheet of heavy‑duty foil like he was opening a letter from someone who owed him money.

He laid the ribs down and added:

  • A drizzle of honey

  • A line of butter

  • A splash of apple juice

  • A tiny dusting of Hotter Than My Ex for good measure

Wrapped tight. Sealed like a vault.

2 Hours — Braise Phase

  • Temp: 225°F

  • Goal: Tenderize the meat until it almost gives up

  • Sizzleton leaned back, arms crossed, watching the smoker like a king watching his kingdom

At the end of hour two, he unwrapped the ribs and nodded.

“Yeah… they’re starting to talk.”

Chapter 4: The Finish — “The Glaze of Glory”

The ribs went back on the smoker, naked and vulnerable.

Sizzleton brushed them with a glaze made of:

  • His house BBQ sauce

  • A spoon of honey

  • A pinch of Hotter Than My Ex for that final kiss of heat

1 Hour — Set Phase

  • Temp: 225°F

  • Goal: Tighten the glaze, finish the bark, lock in the shine

  • No spritzing

  • No touching

  • No mercy

By the end, the ribs glistened like polished armor.

 Chapter 5: The Feast — “Fall‑Off‑the‑Bone? No. Bite‑Through Perfection.”

Sizzleton sliced between each bone, steam rising like battle smoke.

The meat pulled clean with a gentle tug — not mushy, not tough — just the perfect 3‑2‑1 tenderness.

He took a bite, eyes narrowing as the heat from Hotter Than My Ex crept in slow, then hit fast.

“Ahhh,” he said. “Just like old times.”

He raised a rib to the sky.

“For flavor… For fire… For Sizzleton.”
